Homemade German Potato Salad Recipe

Homemade German Potato Salad Recipe 

Ingredients

  • 3 cups potatoes, peeled and diced
  • 4 slices bacon
  • 1 small onion, diced
  • 1/4 cup white vinegar
  • 2 tablespoons water
  • 1 1/2 tablespoons granulated sugar (add a little more if you like it sweeter)
  • 1 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Place the diced potatoes into a large pot and cover them with water by about 1 to 2 inches. Bring to a boil and cook for around 10 minutes, or until the potatoes are fork-tender. Drain and let them cool slightly.
  2. While the potatoes are cooking, cook the bacon in a large skillet over medium-high heat until crispy and browned, about 10–12 minutes. Transfer the bacon to a paper towel-lined plate. Once cooled, crumble it into small pieces. Leave the bacon grease in the skillet for extra flavor.
  3. Add the diced onion to the skillet and cook in the bacon grease over medium heat until softened and lightly browned, about 6–8 minutes.
  4. Stir in the vinegar, water, sugar, salt, and black pepper. Bring the mixture to a gentle boil.
  5. Add the cooked potatoes and half of the crumbled bacon into the skillet. Stir gently so the potatoes soak up all the delicious dressing. Cook for another 3–4 minutes until everything is warmed through.
  6. Transfer the warm potato salad to a serving bowl. Top with the remaining bacon and sprinkle fresh parsley over the top before serving.
