Cheesy Ground Beef and Potatoes

 Cheesy Ground Beef and Potatoes

Ingredients

  • Nonstick cooking spray
  • 3 cups thinly sliced potatoes, peeled
  • 2 tablespoons melted butter
  • 1/2 teaspoon salt
  • 1 pound lean ground beef
  • 1 can (10.5 ounces) cream of mushroom soup
  • 1 1/2 cups shredded sharp cheddar cheese, divided
  • 1/2 cup whole milk
  • Salt and black pepper, to taste

Instructions

  1. Preheat your oven to 400°F. Lightly spray a 9x13-inch baking dish with nonstick cooking spray.
  2. Add the sliced potatoes to a large bowl. Pour the melted butter over the potatoes and sprinkle with the salt. Toss everything together until the potato slices are evenly coated.
  3. Arrange the potatoes in overlapping layers along the bottom and sides of the baking dish.
  4. Bake the potatoes for about 20–30 minutes, or until they become fork-tender.
  5. While the potatoes are baking, cook the ground beef in a large skillet over medium-high heat. Break it apart as it cooks until browned and fully cooked, about 5–7 minutes. Drain any excess grease.
  6. Transfer the cooked beef to a mixing bowl. Stir in the cream of mushroom soup, 3/4 cup of the shredded cheddar cheese, and the milk. Season with salt and black pepper to taste. Mix until creamy and combined.
  7. Remove the potatoes from the oven and spread the beef mixture evenly over the baked potatoes.
  8. Return the dish to the oven and bake for another 15 minutes until hot and bubbly.
  9. Sprinkle the remaining cheddar cheese over the top and bake for an additional 4–5 minutes, or until the cheese is melted and gooey.
