Creamy Cheeseburger Soup
Ingredients
- 4 tablespoons butter, divided
- ½ pound lean ground beef
- ¾ cup chopped onion
- ¾ cup shredded carrots
- ¾ cup chopped celery
- 1 teaspoon dried basil
- 1 teaspoon dried parsley
- 4 cups peeled and cubed potatoes
- 3 cups chicken broth
- ¼ cup all-purpose flour
- 1 ½ cups milk
- 2 cups cubed cheddar cheese
- ¼ cup sour cream
- Sliced green onions, for garnish
Instructions
- Cook the beef and veggies: In a large pot, melt 1 tablespoon of butter over medium heat. Add the ground beef, onion, carrots, and celery. Cook until the beef is browned and crumbly, about 5–7 minutes.
- Add herbs and potatoes: Stir in the basil and parsley. Add the potatoes and chicken broth, then bring everything to a boil. Reduce the heat to low and let it simmer for 10–12 minutes, until the potatoes are tender.
- Make the creamy sauce: In a small saucepan, melt the remaining 3 tablespoons of butter over medium heat. Whisk in the flour until smooth, about 1 minute. Slowly pour in the milk, whisking constantly, until the sauce thickens and becomes smooth.
- Combine and melt: Pour the creamy sauce into the soup pot while stirring. Bring to a gentle boil, then lower the heat. Add the cheddar cheese and stir until melted and creamy.
- Add the finishing touch: Stir in the sour cream and let it heat through (don’t let it boil).
- Serve and enjoy: Ladle the soup into bowls and top with sliced green onions. Serve hot and enjoy your cozy, cheesy creation!
