Spinach Avocado Chicken Burgers

Spinach Avocado Chicken Burgers
Ingredients
For the Avocado Mayo (Optional)
- 2 medium avocados
- 4 tablespoons avocado oil
- Juice of 1 lime
- 1/4 teaspoon sea salt
- 1/8 teaspoon black pepper
For the Chicken Burgers
- 1 pound ground chicken
- 1/2 cup finely chopped spinach
- 2 tablespoons finely chopped cilantro
- 2 tablespoons coconut flour (optional, helps hold the burgers together)
- 1 tablespoon avocado oil, plus extra for cooking
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
- Juice of 1 lime
- 1 small avocado, diced into chunks
- Butter lettuce leaves, optional for serving
Instructions
- Start by making the avocado mayo. Add the avocados, avocado oil, lime juice, sea salt, and black pepper to a blender or food processor. Blend until smooth and creamy, then set it aside.
- Heat a grill or grill pan over medium-high to high heat. If you’re using a grill pan, lightly coat it with avocado oil.
- In a large mixing bowl, combine the ground chicken, spinach, cilantro, coconut flour, avocado oil, garlic powder, onion powder, sea salt, black pepper, and lime juice. Mix everything until just combined.
- Carefully fold in the diced avocado chunks so they stay mostly intact and don’t turn mushy.
- Shape the mixture into 4 to 5 burger patties, making sure the avocado pieces are evenly spread throughout each burger.
- Cook the burgers for about 5 minutes per side, or until the internal temperature reaches 165°F and the burgers are nicely browned on the outside.
- Serve the burgers wrapped in butter lettuce leaves or on their own. Add a generous spoonful of avocado mayo on top for extra creamy flavor.
