CREAMY CAJUN CHICKEN PASTA
Ingredients
  • 8 ounces penne pasta
  • 2 tablespoons olive oil
  • 2 boneless, skinless chicken breasts, pounded to an even thickness
  • 1 1/2 tablespoons Cajun seasoning, divided
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 tablespoon all-purpose flour
  • 1 1/2 cups half-and-half
  • 1/3 cup grated Parmesan cheese, plus extra for serving
  • Salt and black pepper, to taste
  • 1 medium tomato, diced
  • Fresh parsley, chopped, for garnish
Instructions
  1. Bring a large pot of water to a boil and add about 1 teaspoon of kosher salt. Cook the penne according to the package directions until it's al dente. Drain the pasta and set it aside while you prepare the chicken and sauce.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium heat. Season both sides of the chicken breasts with 1 tablespoon of Cajun seasoning.
  3. Place the chicken in the hot skillet and cook for about 3 minutes per side, adjusting the time as needed depending on thickness. Make sure the thickest part reaches an internal temperature of 165°F. Transfer the cooked chicken to a plate and let it rest briefly before slicing.
  4. Wipe out the skillet if needed and return it to medium heat. Add the butter and let it melt, then stir in the minced garlic. Cook for about 30 seconds until fragrant, being careful not to burn it.
