Buffalo Chicken Nachos
Ingredients
- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breast
- Salt and black pepper, to taste
- 1/2 cup buffalo sauce
- 1/2 cup ranch dressing
- 1 bag corn tortilla chips (about 10–15 ounces)
- 1 cup shredded Colby Jack cheese
- 2 to 3 green onions, thinly sliced
Instructions
- Preheat your oven to 400°F. If you want easier cleanup, line a large baking sheet with foil.
- Heat the olive oil in a large skillet over medium heat. Add the chicken breasts and season with salt and pepper. Cook for about 10–12 minutes, or until the chicken is fully cooked and no longer pink inside.
- Remove the chicken from the skillet and shred it using two forks.
- Return the shredded chicken to the pan. Stir in the buffalo sauce and ranch dressing, then let everything simmer together for 1–2 minutes so the flavors blend nicely.
- Spread the tortilla chips out evenly on the prepared baking sheet. Spoon the buffalo chicken mixture over the chips, then sprinkle the shredded cheese all over the top.
- Bake for 5–7 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and top with sliced green onions. Serve warm and enjoy!
