Creamy Cajun Linguine
Ingredients
For the Cajun Linguine
- 6 ounces dry linguine pasta
- 2 tablespoons unsalted butter
- 1 tablespoon minced shallot
- 1 tablespoon minced garlic
- 1 tablespoon Cajun seasoning
- 1/4 cup dry white wine
- 1 tablespoon fresh lemon juice
- 1/3 cup heavy cream
- 1/3 cup half-and-half
- 1/4 cup freshly grated Parmesan cheese
- Salt and freshly cracked black pepper, to taste
- Chopped chives or green onions, for garnish
Homemade Small Batch Cajun Seasoning
- 1 teaspoon smoked paprika
- 1/2 teaspoon kosher salt
- 1/2 teaspoon garlic powder
- 1/4 teaspoon dried oregano
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon dried thyme
- 1/4 teaspoon onion powder
- 1/4 teaspoon white pepper
Instructions
- Bring a large pot of salted water to a boil and cook the linguine until al dente according to the package directions. Drain the pasta and set it aside.
- In a large skillet over medium heat, melt the butter. Add the minced shallot, garlic, and Cajun seasoning. Stir everything together and cook for about 1 minute until fragrant.
- Pour in the white wine and let it simmer for 1 to 2 minutes, stirring occasionally, until most of the liquid cooks down.
- Stir in the lemon juice and cook for another minute. Slowly pour in the heavy cream followed by the half-and-half. Let the sauce gently simmer for about 4 to 5 minutes, stirring now and then until slightly thickened.
- Reduce the heat to low and continue cooking for another 1 to 2 minutes for an extra creamy texture.
- Remove the skillet from the heat and stir in the freshly grated Parmesan cheese until melted and smooth. Add the cooked linguine and toss everything together until the pasta is fully coated in the creamy Cajun sauce.
- Season with black pepper to taste and garnish with chopped chives or green onions before serving.
