Healing Cabbage Soup

Ingredients

  • 3 tablespoons olive oil
  • ½ medium onion, chopped
  • 2 garlic cloves, minced
  • 2 quarts (8 cups) water
  • 4 teaspoons chicken bouillon granules
  • 1 teaspoon salt, or to taste
  • ½ teaspoon black pepper, or to taste
  • ½ head green cabbage, cored and roughly chopped
  • 1 (14.5-ounce) can Italian-style stewed tomatoes, drained and diced

Instructions

  1. Heat the olive oil in a large soup pot over medium heat. Add the chopped onion and garlic, then cook for about 5 minutes, stirring occasionally, until the onion is soft and fragrant.
  2. Pour in the water and stir in the chicken bouillon, salt, and black pepper. Bring the soup to a gentle boil.
  3. Add the chopped cabbage and let it simmer for about 10 minutes, or until the cabbage starts to soften and wilt.
  4. Stir in the diced tomatoes. Bring the soup back to a boil, then reduce the heat and let it simmer for 15–30 minutes, stirring occasionally to blend the flavors.
  5. Taste and adjust seasoning if needed. Serve hot.
