FRENCH ONION SOUP RECIPE

Ingredients

  • ½ cup unsalted butter
  • 2 tablespoons olive oil
  • 4 cups onions, thinly sliced
  • 5 cups beef broth
  • 2 tablespoons dry sherry
  • 1 teaspoon dried thyme
  • Salt and black pepper, to taste
  • 4 slices French bread
  • 4 slices provolone cheese
  • 2 slices Swiss cheese, diced
  • ¼ cup grated Parmesan cheese

Instructions

  1. Start by gathering all your ingredients so everything is ready to go.
  2. In a large stockpot over medium heat, melt the butter together with the olive oil.
  3. Add the sliced onions and cook, stirring often, until they become soft and translucent. Take your time here—don’t let them brown.
  4. Pour in the beef broth and dry sherry, then sprinkle in the dried thyme. Season with salt and pepper to taste.
  5. Let the soup gently simmer for about 30 minutes so the flavors can come together.
  6. While the soup simmers, preheat your oven broiler.
  7. Ladle the hot soup into oven-safe bowls. Place one slice of French bread on top of each bowl (you can break the bread into pieces if you like).
  8. Top the bread with one slice of provolone, half a slice of diced Swiss cheese, and about 1 tablespoon of Parmesan cheese.
  9. Set the bowls on a rimmed baking sheet and place them under the broiler for 2–3 minutes, just until the cheese is melted, bubbly, and lightly golden.
  10. Carefully remove from the oven and serve hot.
