Easy Chicken Taco Dump

Easy Chicken Taco Dump
Ingredients
- Cooking spray
- 1 jar (16 oz) thick and chunky mild salsa
- 1 can (4 oz) diced green chiles
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1/4 teaspoon salt
- 5 cups shredded cooked chicken (rotisserie chicken works great)
- 1 can (15 oz) black beans, rinsed and drained
- 1 1/2 cups frozen fire-roasted corn
- 12 corn tortillas (6-inch), cut into pieces
- 3 cups shredded Monterey Jack cheese, divided

- Shredded lettuce
- Chopped red onion
- Fresh chopped cilantro
- Taco sauce
- Sour cream
- Chopped avocado
- Crushed tortilla chips
Instructions
- Preheat the oven to 375°F and lightly grease a 9×13-inch baking dish with cooking spray.
- Mix the filling. In a large bowl, combine the salsa, diced green chiles, chili powder, cumin, and salt. Stir until everything is blended.
- Add the main ingredients. Mix in the shredded chicken, black beans, and frozen corn until well combined.
- Start layering. Spread half of the tortilla pieces across the bottom of the prepared baking dish.
- Add the filling. Spoon half of the chicken mixture over the tortillas, then sprinkle about 1 cup of the shredded Monterey Jack cheese on top.
- Repeat the layers. Add the remaining tortilla pieces, followed by the rest of the chicken mixture.
- Cover and bake. Cover the dish with aluminum foil and bake for 35 minutes.
- Add more cheese. Remove the foil and sprinkle the remaining 2 cups of cheese evenly over the top.
- Bake again. Return the dish to the oven and bake for another 10 minutes, or until the cheese is melted and lightly golden.
- Serve with toppings. Let the casserole cool slightly, then top each serving with your favorite taco toppings like lettuce, avocado, sour cream, or crushed tortilla chips.
